Ingredients

  • For the filling:
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1 cup thinly sliced bell peppers (red, yellow, or green)
  • 1 cup thinly sliced mushrooms
  • 1 cup cooked vermicelli noodles
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • For the wrappers:
  • 10-12 spring roll wrappers
  • Water for sealing
  • For frying:
  • Vegetable oil for frying

Instructions

  • Place the sesame oil in a big skillet and heat it to a temperature that is somewhere in the middle.
    Once the ginger and garlic have been minced, add them to the pan and sauté them for one to two minutes, or until they develop a fragrant aroma.
  • A variety of vegetables, including shredded cabbage, carrots, bean sprouts, bell peppers, and mushrooms, should be placed in the skillet. The veggies should be cooked for three to four minutes, or until they have gained a little degree of tenderness while maintaining their crispness.
  • Combine the soy sauce and the vermicelli noodles that have been cooked by stirring them together. Allow the mixture to continue cooking for a further two to three minutes while stirring it occasionally.
  • Add pepper and salt to taste, and season with salt when you are done. The filling needs to be taken away from the heat and let to completely cool down before being served.
