Ingredients

  • For the marinade:
  • 1.5 lbs (about 700g) boneless, skinless chicken thighs or breasts, cut into thin strips
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons lime juice
  • 1 tablespoon curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • For the peanut sauce:
  • 1 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1/2 cup coconut milk
  • 1/4 cup water (more if needed to adjust consistency)
  • Crushed peanuts and chopped cilantro for garnish (optional)

Instructions

  • For the purpose of preparing the marinade for the chicken, take a bowl and mix together the following ingredients: soy sauce, fish sauce, brown sugar, chopped garlic, grated ginger, lime juice, curry powder, ground coriander, ground cumin, and pepper. Gather all of these components together and mix them together until they are completely incorporated. Be cautious to thoroughly combine the sugar in order to guarantee that it is completely dissolved.
  • Ensure that the chicken strips are completely submerged in the marinade before adding them to the dish. This should be done before adding the chicken strips.
