  • For the marinade:
  • 1.5 lbs (about 700g) boneless, skinless chicken thighs or breasts, cut into thin strips
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons lime juice
  • 1 tablespoon curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • For the peanut sauce:
  • 1 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1/2 cup coconut milk
  • 1/4 cup water (more if needed to adjust consistency)
  • Crushed peanuts and chopped cilantro for garnish (optional)

  • For the purpose of preparing the marinade for the chicken, take a bowl and mix together the following ingredients: soy sauce, fish sauce, brown sugar, chopped garlic, grated ginger, lime juice, curry powder, ground coriander, ground cumin, and pepper.
